In 2012, the Agricultural Utilization Research Institute conducted the first ever comprehensive study of wild rice (zizania). For the first time, researchers studied wild rice in its flour form. As flour, wild rice is absorbed differently by the body, unlocking properties that were previously unknown. Wild rice is rich in phytonutrients, phytochemicals, fiber, and has more protein than hemp, soy, and whey. Essentially, science finally realized what the Anishinaabe have known for millennia, that wild rice is wonderfood!
